A detail introduction to the building blocks of French-inspired brunch cooking, led by Chef Cleo – classically trained at Prue Leith Culinary School in England and former private chef to the British Ambassador and his guests in Israel and Japan, including dignitaries such as Margaret Thatcher and the Duke of Edinburgh.
In this relaxed and rewarding class, you’ll learn to prepare elegant dishes from scratch using foundational techniques every confident cook should know:
- How to make proper blinis from batter to pan
- Culturing your own crème fraîche
- Perfecting poached eggs and a classic hollandaise
- Blanching seasonal vegetables and finishing with a lemon butter sauce
- Crafting a dry caramel sauce to elevate a simple fruit salad
With a focus on technique over trends, Chef Cleo brings a wealth of real-world experience, from embassy kitchens to wedding catering on the Sunshine Coast, and a warm, generous teaching style shaped by both professional excellence and a passion for sharing good food.
Expect a full, satisfying menu. Bring a take-home food container if you can’t finish it all!

Gift cards payments done by phone at 604-428-3700 or call us to pay with credit card. Payment is required to secure your space. No seats can be held. Once booked all class cancelations receive store credit, however ABSOLUTELY NO CREDIT GIVEN WITHIN 72 HOURS OF CLASS STARTING. Options are to gift your ticket and send someone in your place, or forfeit your seat and we will send the recipes. Please respect this policy and do not call us to ask for a credit within this time-frame. We do not make exceptions.
