Balti and Pakistani Cuisine! An Evening with Chef John! **2 SPACES LEFT

Growing up in Birmingham in the centre of England, John really couldn’t escape the pull of the spices of the Indian Subcontinent. Perhaps unknown to most is that “Indian Restaurants” are mostly derived from Pakistani cuisine. The king of these dishes has to be the Balti.
While similar to Indian (in that fresh ground spices are simmered with tomato or onions and ginger to make a master sauce to simmer the vegetables or meats), in Balti the slow cooked meats are flash fried like Chinese in a wok and the fresh chili, garlic and spices help lift the dish to the next level. We’ll prepare a couple of lovely veggie appetizers that can be made in advance then flash fry the prawns and the chicken to wondrous flavour explosions. Finishing our meal, a restaurant favourite – Cardamon flavoured ice cream!
