MONDAY MARCH 11TH 630-930 RIB ROAST

Simplicity at it’s best- forgiving for even a novice- and it’s packed with flavour on its own. The bone, the marbling, and a turn at dry aging in the fridge. Serve it alongside the classic trimmings..

MONDAY MARCH 18TH 630-930 SHORT RIBS

The perfect cut for braising! Step by step, whether it’s Boeuf Bourginonne or good old stew, start with short ribs, follow the steps and the results will be superb!

  • Smashed Cucumber and Rice Noodle Salad
  • Thai-inspired Short Ribs with Dark and Fragrant Sticky Sauce
  • Steamed Rice and Chile Sauce
  • Chilled Lime Pudding

MONDAY MARCH 25TH 630-930 BEEN TENDERLOIN

It’s super lean so developing flavour means special techniques, then care to not overcook. This retro favourite classic Beef Wellington does both. Intensely flavoured layers coat the meat, then it’s wrapped in puff pastry. We’ll give it a modern presentation, doing individual Wellies.

  • Endive and Pear Salad with Toasted Walnut Vinaigrette and Crumbled Cheese
  • Beef Wellington
  • Mushroom-Madeira Ragout
