Italian-Style Cook School! With Chef Glenys Morgan **1 SPACE LEFT

The world has a love affair with Italian food and we all have our favourite dishes. From Tuscany to Sicily, the techniques and skills that come from Italian kitchens make anyone a better cook. The rich-wine laced braised dishes- osso buco, ragù Bolognese- are lessons if building flavours and slow cooking. Skilled grilling gives yields the the perfect biftecca or a crispy-skin “chicken under a brick”. Italy’s been ahead of the rest of us when it comes to kale and the “dark greens” and there’s never a dull vegetable: the hot olive oil and garlic dip “bagna cauda” for crudités, spicy greens with raisins, Tuscan potato cakes, and bright beautiful salads. Soups- smoky white bean with prawns, classic minestrone, Tuscan ribollita packed with vegetables- endless possibilities. Of course there’s the pasta dishes from simple to sublime. Pizza and focaccia, those flatbread wonders we love- and so deliciously easy, even if you’ve never used yeast in your life. The desserts are as diverse as the pasta! The dense rich Torta di Modena- a chocolate cake like no other. Zabaglione (a cousin to the French sabayon) and necessary for the wonderful Tirami sù. Biscotti? Balsamic caramel gelato?

While preparing and cooking each night’s roster, the lessons include fine tuning knife skills, using a mandoline, understanding all the great ingredients, sautéing, grilling, roasting- and creating the healthy foods that are Italian cuisine.


Each evening will begin with several antipasti items before the “menu”.

  • Tuscan Potato Cakes and Seared Greens
  • Zabaglione and Tiramisù
