Provence is the fruit and vegetable garden of France, where much of its most beautiful produce is grown. These ingredients, combined with Provence’s unique identity, position, and history have resulted in a cuisine full of heart, balance, and soul―a cuisine that showcases its peoples’ reverence for the produce, the changing seasons, and the land.
Chef John has delighted in a recent visit and shares some of his amazing knowledge and insight into this vibrant and healthy cuisine.
- Herb-crusted Chevre, Beurre Blanc, dressed Mesclun
- Small Stew of Sea Bass, Mussels and Prawns and Warm Garlic Aioli
- Grillades of Tuna with Olive Oil Mash, Tomato Herb Dressing
- Berry and White Chocolate Clafouti, vanilla ice cream
