Spring is coming and you know what that means? Ripe sweet berries and delicious fruit are just around the corner! What perfect timing for a pie class!
Ginette is showcasing her love of pies and wants to share all of her favourite tips and tricks to the perfect crust, fillings, and toppings. Join her for an afternoon of pie-making! All students get to make and take home a fresh strawberry rhubarb pie in a 6″ glass pie plate.
1. Classic Lemon Meringue Tart in a Pate Sucree Crust
2. Strawberry-Rhubarb Pie in a Flaky Pie Dough Crust, showing both a classic crimped top and a lattice-top
3. Apricot Mascarpone Tart in a Pistachio Shortbread Crust
Techniques include:
1. Different Pie Doughs

Pate Sucree, Flaky Pie Dough, Nut crusts
Show technique/tricks to making doughs
Blind baking
Lining tart shells

2. Fillings

Learn different types of fillings: Fruit filling, Pastry Cream, Curd, etc.

3. Pie Tops

Show different toppings, such as crumbles, lattice tops, crimping dough, etc.
Show how to eggwash

4. Taste Test (Hands on! The best part!)

Taste different pies and discuss their attributes
