• Cacio e Pepe al Forno –  we’re not in a Roman restaurant, we just want great flavour, and an easy dinner from the oven.  Pepper, garlic, cheese, pasta…..
• Roasted Asparagus with Lemon Gremolata -toasted walnuts, herbs and vinaigrette, a perfect salad or side dish for spring
• Chicken, Pancetta and Bean Ragu with Focaccia – no simmering for hours (unless “slow cooker”)  this Umbrian stew changes lanes at this time of year.  Focaccia, that’s easy.
• Chocolate Puddings with Rosemary Crema – need we say more?
