Cha-Cha-Churros!

Cha-Cha-Churros! Like a donut but even better! Start by making an easy choux pastry dough, then piped into hot oil with a piping bag and large closed star tip like this one from Wilton. Rolled in cinnamon sugar and dipped in a sweet sauce and you have a delicious dessert or afternoon sweet treat!

Ingredients
  

Churros:

  • 1 cup water
  • 6 tbsp. butter
  • 2 tbsp. granulated sugar
  • 1 tsp. pure vanilla extract
  • 1 c. all-purpose flour
  • 1 tsp. kosher salt
  • 2 large eggs
  • Vegetable oil for frying

Cinnamon Sugar

  • ½ cup sugar
  • 2 tsp cinnamon

Chocolate Dipping Sauce (optional)

  • 3/4 c. Semi sweet Chocolate wafers
  • 3/4 c. heavy cream
  • 1/4 tsp. Salt

Instructions
 

  • In a large saucepan over medium heat, add water, butter, and sugar. Bring to a boil, then add vanilla. Turn off heat, add flour and salt, and stir with a wooden spoon until thickened, about 30 seconds. Let mixture cool for 10 minutes.
  • During this time, mix cinnamon and sugar and pour in large flat plate.
  • To cooled mixture, using a hand mixer, beat in eggs one at a time until combined. Transfer mixture to a piping bag fitted with a large open star tip.
  • In a large flat wide pot over medium heat, add approximately 1″ high of oil and heat to 375°. Holding the piping bag a few inches above the oil, carefully pipe churros into 5-6″ long ropes. Use kitchen scissors to cut off dough from piping bag.
  • Fry until golden, 4 to 5 minutes, turning as necessary. Fry 3 to 4 churros at a time and let oil come back to 375° before each batch. Remove churros with a slotted spoon or tongs and immediately roll churros in cinnamon sugar, then place on a cooling rack.

Chocolate sauce:

  • Place chocolate chips in a medium heatproof bowl.
  • In a small saucepan over medium heat, bring heavy cream to a simmer. Pour hot cream over chocolate chips and let sit 2 minutes. Add salt and whisk to combine.

Ingredients
  

  • 3 cups whole milk
  • ½ cup Arborio rice
  • ¼ cup sugar
  • ¼ tsp vanilla paste
  • ½ tsp cinnamon or 1 cinnamon stick

Instructions
 

  • Heat the milk, sugar, vanilla paste, and cinnamon over high heat until boiling.
  • Add rice and reduce heat to simmer, stirring occasionally, for about 25-30 minutes or until rice is tender. *If pudding thickens and rice is still too firm, warm some milk in the microwave and add ¼ cup by ¼ cup until soft.
  • Place in small bowls and serve immediately.

Ingredients
  

Donuts:

  • 2/3 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp ground nutmeg or more to taste
  • 1/8 tsp salt
  • 1/4 cup milk
  • 1/2 tsp vanilla extract
  • 5 tbsp softened butter
  • 1/3 cup white sugar
  • 1 egg

Coating:

  • 1/3 cup white sugar
  • 1 tsp ground cinnamon

Instructions
 

  • Preheat oven to 350 degrees F (175 degrees C). Grease 2 mini donut pans with spray.
  • Whisk flour, baking powder, nutmeg, and salt together in a bowl.
    2/3 cup all-purpose flour, 1/2 tsp baking powder, 1/4 tsp ground nutmeg or more to taste, 1/8 tsp salt
  • Stir milk and vanilla extract together in a separate bowl.

  • Beat butter and 1/3 cup white sugar together in a third bowl using an electric mixer until smooth and creamy; beat in egg.
    5 tbsp softened butter, 1/3 cup white sugar, 1 egg
  • Alternate adding flour mixture and milk mixture into butter mixture about 1/3 at a time and mix with wooden spoon until batter is smooth.
  • Spoon batter into a piping bag and pipe into a mini donut pan about 2/3-full.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, 8-10 minutes.
  • Mix sugar and cinnamon together in a bowl; add warm doughnuts and gently toss with hands until coated.

Ingredients
  

Crust

  • 1-1/2 cups graham cracker crumbs
  • 2 tablespoons granulated sugar
  • 1/4 cup butter melted

Filling

  • 24 oz cream cheese softened
  • 2/3 cup granulated sugar
  • 4 Eggs
  • 12 oz White Candy Melts
  • 1 teaspoon Imitation Clear Vanilla Extract
  • 1-1/3 cups heavy whipping cream

Instructions
 

  • Preheat oven to 300°F. Prepare 9 in. springform pan with vegetable pan spray. Wrap bottom half of pan in heavy-duty aluminum foil.
  • For crust, stir together graham cracker crumbs, sugar, and butter. Pour mixture into prepared pan and firmly press into bottom; set aside.

  • For filling, in large bowl, beat cream cheese and sugar with electric mixer on medium speed until light and fluffy. Add eggs, one at a time, while mixing at low speed.

  • In a microwave safe bowl, melt Candy Melts candy according to package directions. Cool slightly. Add melted candy, vanilla, and cream to cream cheese mixture. Mix well. Pour batter into pan.

  • Place pan on rimmed baking sheet. Fill baking sheet with about 1/2 inch of water. Bake for 2 hours 15 minutes to 2 hours 30 minutes, or until center of cheesecake jiggles only slightly. Transfer to cooling grid to cool completely; refrigerate overnight or at least 12 hours until cheesecake is firm.
  • Finally, top with your favorite topping like chocolate or fruit.
