Our ongoing love affair with cast iron! A new round of methods and techniques that takes a cook’s work to the next level. Textures perfected, colour from the controlled heat, results that are unique to cast iron cooking.
- Middle Eastern “Flaky” Bread- Warm, melt-in-your-mouth buttery… a stove-top appetizer bread served with dips! This will become a party favourite.
- Sous-vide and the Steak- the new and old come together in this modern reversed technique that chefs adore. We’ll add some crispy skillet potatoes to the mix with a peppercorn butter.
- Chicken-Under-A-Brick- the return of this luscious crispy chicken with pan juices that create a
tangy hot-dressed salad.
- Dessert is Bumbleberry Buttermilk Upside-Down Cake! Batter Up! The glory of a caramel bottom that becomes the top- with a lesson on the great “flip” – both sweet and savoury.
