Chef Glenys lived in Mexico and has some true and authentic recipes to share. Warm weather means grilling, garden fresh ingredients and time to chill with a great drink. This south of the border offering is light and fresh yet stylish enough for company. Pick and choose a few items- it’s an easy dinner.
Totopos- if chilaquiles and nachos got together, this would be it! Melting cheese, wedges of lime, crispy tortilla chips “dressed” for baking or finishing on the grill. Improvise as you like!
Sweet Corn and Jalapeño Gazpacho- get ready for Chilliwack corn and summer herbs.
Nueva MolÃ© Chicken Wings- everyone love chicken wings, these have a molÃ© twist.
Grilled Flank Steak with Charred Romaine Salad with fresh Tomatillo Dressing
Grilled Pineapple with Chilled Natilla Sauce- we’ll begin with pineapple but as summer moves along we could use peaches, apricots, nectarines- anything we love from the Okanagan topped with this cousin to ice cream.
