Instructions
In a small sauce pan bring 1 cup water to a boil. Add ½ cup sugar and mix until sugar dissolves completely. Remove from heat and add mint leaves. Let steep for 20 minutes to infuse flavour.
In another pot (at the same time potentially) bring 4 cups water to a boil. Add whole hibiscus leaves and let steep for 20 minutes until water is bright pink.
Combine hibiscus water and simple syrup. Let cool, pour over ice, and enjoy!
