Fall Pies! With Pastry Chef Ginette

It’s time to start thinking about pie! Thanksgiving is just around the corner! In this class Ginette is showcasing her love of pies and sharing all of her favourite tips and tricks to the perfect crust, fillings, and toppings. Join her for an afternoon of pie-making! All studentsget to make and take home a fresh home-made pie in a 6″ pie plate.
– Maple Pumpkin Tart
– Classic Apple Pie
– Chocolate Bourbon Pecan Pie

Techniques include:
1. Different Pie Doughs

Pate Sucree, FlakyPie Dough, Nut crusts
Show technique/tricks to making doughs
Blind baking
Lining tart shells

2. Fillings

Learn different types of fillings: Fruit filling, Pastry Cream, Curd, etc.

3. Pie Tops

Show different toppings, such as crumbles, lattice tops, crimping dough, etc.
Show how to eggwash

4. Taste Test (Hands on! The best part!)

Taste different pies and discuss their attributes
